Last week, in celebration of a friend’s natal anniversary, I whipped up a lovely coconutty frozen concoction inspired by some of his favorite flavors: mango, ginger and cinnamon. What began as an orgasmic sorbet flavor, became a doubly rich textured pleasure on a spoon with all that coconuttiness. It went a little like this for #larkday:

Friday’s flavor of the day was mildly incredible:
Salted Chocolate – Cacao Crunch – Ginger Chunk Coconut Icy Creamy
2 cans full fat coconut milk
1/2 cup shredded coconut
1/2 cup cacao powder
1/3 cup honey
1/3 cup coconut oil
2 tsp sea salt
1/8 – 1/4 cup cacao nibs
1/2 – 3/4 cup candied ginger – chopped

Chocolate-Cacao-Doublemint-Coconut ice cream

1/2 cup coconut flakes
2 cans full fat coconut milk
1/2 cup coconut oil
1/2 – 3/4 cup packed fresh mint leaves
1/4 – 1/2 cup chocolate powder
1/4 – 1/2 cup honey
pinch of salt
1/4 cup (or less) of cacao nibs
1. blend all ingredients in the blender until smooth
2. pour into frozen ice cream maker tub

Rose Petal Coconut Ice Cream
A rose by any other spoonful would be just as sweet…
2 cans full fat coconut milk
1/2 cup coconut flakes
